Stuffed Avocado with Salsa

Ingredients:

1 c. baby lettuce
1 tbsp. red onion
2 tbsp. pickled jalapeño
1 tbsp. cilantro
1 tbsp. corn
1 tbsp. butter
1 tsp. lime juice
1 tbsp. feta cheese
1½ oz. chicken
½ avocado

Instructions:

  • In skillet, add butter and slightly brown corn over low heat.
  • Remove corn from skillet, add onion, pickled jalapeno and chicken. Mix and heat through.
  • Add baby lettuce and 1/2 avocado to small bowl. Garnish avocado half with ingredients from skillet.
  • Top with cilantro and lime juice
