One Pot Burrito Bowl

This easy & delicious burrito bowl is ready in just 30 minutes and is a breeze to clean up!  Perfect for busy weeknights!


  • Seasoning:  Chili Powder, taco seasoning, and salt and pepper to taste
  • Veggies: Red bell peppers, sweet onions, corn, diced green chiles
  • Legumes: black beans or pinto beans or both
  • Tomatoes:  Diced tomatoes and chunky salsa
  • Rice: Jasmine rice uncooked 
  • Cheese:  Shredded cheddar jack
  • Meat:  lean ground beef or ground turkey or substitute chicken
  • Liquid:  chicken stock or vegetable broth
  • Extras:  Cilantro


  • In a large pan over medium heat, saute onions, peppers, and meat with olive oil.  
  • Once meat is browned, stir in salsa, tomatoes, black beans, corn, & green chiles.
  • Add Rice, taco seasoning, chili powder, & chicken stock and bring to a light boil.
  • Cover & reduce heat to low.  Cook about 15-20 minutes or until rice is tender. 
  • Top with your favorite toppings (cheese, cilantro, lettuce) serve with tortilla chips or over lettuce
